Craft Your Inner Chef: Healthy Blueberry Yogurt Cookies

 The Blueberry-yogurt cookies won the vote.Inspired by Lafujimama these cookies are delicious. Today we're sharing them with our friends and hope they feel the same. I also opted to make the Buffalo shrimp dip, which I will blog another time, since I haven't finished baking it.

Ingredients:
1 cup granulated sugar
1 1/2 cups plain Greek yogurt
1 large egg, beaten
1 teaspoon vanilla
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup fresh blueberries

  
Preheat oven to 375 degrees. Grease baking sheets 
  • In one bowl make yogurt mixture: mix sugar and yogurt, then add the egg and vanilla.
  • In a second bowl, mix flour, baking powder, and salt. Blend into the yogurt mixture. Gently fold in the blueberries.
  • Place 2 tablespoons cookie dough onto baking sheets. Leave a couple of inches between each cookie. Bake for about 10-11 minutes, until the cookies start to brown slightly at the edges.
